Gluten free focaccia bread recipe

Glutenf free focaccia

Serves 12

Ingredients

  • 350 ml warm water
  • 25 g dry yeast
  • 375 g rice flour
  • 125 g potato starch
  • 1 medium potato cooked and mashed
  • 40 g xanthan gum
  • a dash of extra virgin olive oil (more for greasing and topping)
  • 3 medium springs of rosemary
  • a pinch of seasalt

 

Method

  1. In a bowl, combine the yeast and warm water with a spatula and stir until well dissolved.
  2. Add the flour, potato starch, mashed potato and xanthan gum and mix thoroughly.
  3. Pour the olive oil over the mixture and blend with hands to form a sticky dough.
  4. Grease the baking tin with olive oil.
  5. Put the dough into the tin and make indentations with fingers all over the top.
  6. Cover, and leave it to rise in a warm place for about 1 hour and 15 minutes.
  7. Preheat the oven to 190C. Bake for 30 minutes.
  8. Sprinkle the top with rosemary, olive oil and salt.

This is a brilliant recipe for kids, both my boys loved it. Often find GF recipes are for quite 'grown-up' tastes, but this was a winner.
